Fungi Foraging - Autumn



We are so excited to start our cookery and baking courses this Autumn and one of the most interesting for foodies and walkers a like is our food foraging and cookery courses with expert food forager Chris Bax.

This one day combined forage and cookery courses showcases 30-40 foraged food items that can be seen and tasted by just a four hour foraging walk along the Monsall Trail just outside Bakewell.  Chris then takes a selection from natures larder to create a stunning 4 course tasting menu for our hungry foragers to watch being cooked and then enjoy a small sample.

We have just a couple of places left on Chris's final foraging course before Christmas.  If you can't make it this time we will be repeating a foraging course in the Spring of next year.

Darren's skill is to build up a stunning and complex plate of food by employing his repertoire of cookery skills on this Chatsworth inspired cookery course and techniques and using fresh seasonal produce which can be found on the Chatsworth Estate.
 
On this Flavours of Chatsworth Cookery Course you will work alongside Darren to produce a stunning 3 course meal made from the finest Derbyshire ingredients. You will take home everything you make on the day to enjoy with family and friends:

Hartingtons of Bakewell has been running over the last few years a number of cookery courses dedicated and inspired by the fabulous flavours and ingredients found locally in Derbyshire on the Chatsworth Estate.  Taken by leading Chef Darren Goodwin.  The latest menu for the Flavours of Chatsworth Cookery Course comprises:
 

•    Home cured fillets of trout with lime, lemon and dill, served with pickled kohlrabi on a watercress butter sauce
  
•    Derbyshire rack of lamb with local wild garlic and breadcrumb herb crust served with potatoes dauphinoise and poached baby globe artichokes
•    Show stopping white chocolate delice with macerated strawberries, served with home made boozy Pimms jelly, a  crisp tuile and chocolate teardrops



Skills learned on the day will include:
 

  • How to professionally cure fish

  • Basic butchery skills including dressing lamb and preparing it as a French rack for roasting

  • Pickling techniques to make stunning looking pickled vegetables

  • Creating your own rich butter sauce

  • Professional patisserie skills including tempering chocolate, how to make the perfect jelly and how to make tuile biscuits

Autumn, Apples & Cider


We are racing into September and Autumn; one of my favourite seasons.  I love apples, nuts and the rustle of newly fallen leaves. Autumn presents itself with it's own challenges such as what do you do with all those fabulous English apples? This brings me onto our new Artisan Cider Making Course where we learn how to produce delicious artisan cider from all those left over apples. Tapas cookery course and spanish cookery

We have just returned from an 18 night holiday around the Balearic Islands off the coast of mainland Spain and yet again we were blown away by the quality of the food produce and just how good eating out on a budget can be.  We fell in love with the Spanish tradition of a relaxed 2 hour lunch on a Menu Del Dia followed by an evening visit to a local tapas bar and dining out on their array of stunning Pinchos.  For those not in the know a Pinchos or known locally where we were as Pintxos are the ultimate open sandwich available in a plethora of colours and flavour combinations.  These combine elegantly with a glass or two of the inexpensive but surprisingly good local wines.  The essence of Spanish cookery just like any good food is to take quality ingredients and then to understand how you combine these flavours to produce interesting and mouth watering flavour combinations.  The essence of good tapas.

Artisan Chocolate - the perfect gift



There is nothing better than receiving a hand crafted artisan gift from the one you love.  We recently had a guy come along who was looking at making chocolates for all his guests on his up and coming wedding.  How romantic.  Artisan chocolates can make a great gift any time of the year, for birthdays, fathers day or just because you can.

Hand tempered artisan chocolates

Artisan chocolates that have been hand tempered with their own infused ganache with natural ingredients such as orange or fresh mint not only have fantastic multi layers of natural flavour they can also look stunning once you have enrobed them with your tempered chocolate.

Ganache Recipe

Orange and Mint – makes approximately 10-12 truffles
100g Milk Chocolate

30g Double Cream

10g butter
20 - 30 drops of orange oil (to taste) Mint Leaves (3-5 to taste)

  •  Weigh ingredients.
  •  
Finely chop the mint leaves. 
  • 
Place the chocolate buttons and cream into a glass bowl and place over a pan of water (bain- 
marie) gently melt the chocolate and cream together (do not whisk or over heat)
  •  
Take off heat once combined and glossy finish, at this point add the butter and stir. 

  • Infuse with the finely chopped mint and add the orange extract, (to taste) 

  • Pour onto a flat tray or into a carton, cover and place into a fridge to set. (between 2 - 4 
hours) 

Your ganache should be slightly firmed but able to scoop and roll into truffle shape. 
You just need to enrobe your genache and then potential decorate your chocolates to create the artisan look.

Sourdough Breadmaking Course & Toast

I was introduced to the delights of sourdough bread about 5 years ago.  Sourdough bread for the uninitiated is bread made using ancient and natural yeast cultures.  It was how we used to make bread before the introduction of a specific strain of baking yeast widely adopted in the beginning of the 20th century.  Prior to that bakers used yeast produced during the beer brewing process.

Name of Sourdough Bread

The name of sourdough bread is derived from the slightly sour taste derived from the lactic acid produced by the lactobacilli and yeast during the proving or fermentation process of the bread.

Sourdough Toast

One of the biggest revelations of experiencing sourdough bread for the first time is when you try toasting it.  Sourdough toast is unbelievable!  The open crumb structure produced by the lactobacilli and the flavour of the bread produces a toast that is unrivalled to any other type of bread in my humble opinion.  Try stilton on toast on sourdough bread and you will think that you have died and gone to heaven!

Hartingtons runs a number of sourdough breadmaking courses with expert artisan bread baker Andrew Auld of the Loaf in Critch.  On his intensive one day sourdough breadmaking course you will learn how to make 3 different style of sourdough breads including a fabulous rye bread.  I think it's fair to say that our Gourmet Supper Club (GSC) hit new heights this March when Darren Goodwin took us through a fantastic 8 course seasonal tasting menu to chase away the winter blues.  We have just released Darren's Gourmet Menu for the 3rd July.  Just a couple of places left for the lucky ones.

Bakewell Christmas Weekend 2014

Bakewell Christmas Weekend arrives this weekend.

A great free family day out with loads of food stores dotted throughout Bakewell.

Come along to Hartingtons School of Food to see free demonstrations as well as artisan food stores in the historic Rutland Mews forecourt and inside in the School of Food. On the day there will be free demonstrations giving a flavour of what goes on inside the School of Food in Bakewell including a baking session on Saturday from a former Masterchef finalist.





On Sunday we will have a pasta making demonstration showing people the finer points of Italian home pasta making. You will also be able to buy handmade pizzas and biscuits fresh from the oven.

The doors of Hartingtons will be open both days from 10am to 4pm on both days. We look forward to welcoming you to our School of Food in the heart of Bakewell and to sharing some Christmas cheer.

Carsington Water Autumn Food Fair & Chocolate Extravaganza

There's a nip in the air. It's the perfect time for chocolate & chocolate tasting.  Carsington Water's food fair returns on Sunday the 19th October with an array of artisan food producers and our own unique chocolate trail.  Follow the chocolate trail around the food fair to find out what fantastic and unusual things that can be produced with the help of the wonderful coccoa bean.  At the end of our chocolate trail enter our free prize draw to win a fabulous chocolate hamper provided by artisan chocolatier Naughty & Nice from Bakewell.

'Funky' Preserving Course

It's the season when suddenly we have a glut of autumn fruits and vegetables in the garden, but winter approaches.  What do I do with all that lovely fresh produce?  The answer is simple...preserve the flavours and then enjoy all it's wonderful goodness later in the year.

Great British Bake Off - "Gets Baking"

The institution that is the Great British Bake Off returned for series 5 last night with it's cast of starry eyed amateur bakers being put through their baking paces.

Hartingtons has been fortunate to have had 2 contestants from the series to share their baking expertise with keen bakers.  Danny Bryden a semi-finalist in series 3 wowed the GBBO fans & Hartingtons with her savoury strudel and more recently Howard Middleton showed the great british public just what you can do with a range of innovative and gluten free products.

Microbreweries - How many?

Latest figures from the likes of CAMRA would  suggest that the UK has now over 1200 microbreweries.  The Good Beer guide 2014 featured 1147 breweries producing over 5000 different beers.  This trend in new breweries has mirrored the trend seen in the US where the whole craft brewing revolution kicked off.  In the US the number of micro breweries has also increased dramatically over the last 30 years after hitting a low point in the late 1970s at 89. A total of 3,040 active breweries were last   counted by the American Brewers Association at the end of June 2014.  US breweries have just crossed the 3.000 brewery level for the fist time since 1870.  Is this rapid expansion sustainable? The question for many beer commentators has been is this rapid expansion of numbers of breweries something that can continue.  In the US the expansion has been built on microbreweries supplying the local market with the majority of Americans now living within 10 miles of a local microbrewery.  What is the limit on microbrewery numbers?  Based on data from 1873 if the per capita ratio for breweries was replicated then the US could support up to 30,000 micro breweries.

In the UK according to the Campaign for Real Ale's ( CAMRA) the growth prospects are similar  with the most recent figures in 2013 revealing that there were an additional 187 breweries featured in their Good Beer Guide for 2014, a 14% increase on the year before.  West Yorkshire was the area of the country with the most numerous microbreweries with 57 recorded.

CAMRA has also noted the variety of new different styles of microbreweries that were opening including: a converted school outbuilding in Lancashire, beer brewing pizzeria in London & a converted dairy in Buckinghamshire.

Is there a limit to the number of microbreweries?

The beer industry in the UK is worth 16.5 billions pounds and is only 2nd in size in Europe to Germany.  Latest statistics from Chris Holden one of Brew-School and former Director of Insights at Molson Coors and one of the tutors on the Setting Up A Microbrewery Course indicate that microbreweries still account for only about 3% of the total UK beer market.  The current beer trends also indicate that drinkers are turning away from mass produced lager in favour of real ales and craft beers. In 2012 sales of cask beer increased for the first time in 20 years with 2.2 million barrels of real ale being sold a 1.6% rise.  For the latest on the figures for cask beer sales have a look at the latest cask report.

Reuters has recently carried a report about the changing face of beer drinking in the UK.  Gassy lager may be still the chosen tipple for many younger drinkers but there is an increasing appetite amongst  trendy drinkers and women trying real ale highlighting the fact that real ale or craft beer is becoming cool!  You only have to see the likes of Craft Beer Rising in Glasgow to realise that real consumption is no longer the preserve of bearded middle age men.

This is good news for people looking to set up a microbrewery as demand for real ale or craft beer continues to rise at the expense of mainstream and mass produced lagers and beers.


Chris Holden of Ashdale Consulting estimates that microbreweries even with the dramatic increase in numbers still only accounts for 3% of beer production compared to the 7.8% of the market made up by craft breweries in the US.  This gives microbreweries massive scope to convert more drinkers to higher quality more bespoke and interesting beers.

How many microbreweries could we see?

If the current trend in microbrewery openings continues this would suggest that in the next 5 years the UK could be approaching the same number of microbreweries as in the US with over 2000 commercial microbreweries.  Brew-School in Bakewell which started offering courses in All Grain Brewing in 2012 now also offers 3 days weekend courses 4 to 5 times a year instructing over 100 potential micro brewers how they can set up their own microbrewery.

Chris Horne Director at Hartingtons Brew-School comments: "one thing that is clear is that there is an enormous appetite for interesting quality beer in the UK.  Drinkers are more discerning than ever. At Brew-School we hope we can open brewers eyes to the massive range of beers such a Lambic beer, wheat beers, fruit beer and the potential to build winning beer brands.  There are so many untapped markets out there.  Think of a beer brand that appeals to ladies which could appeal to a pretty much an untapped market.  There is a long way to go in the resurgence of microbreweries which is why brewing is such an exciting area to be in right now!"

Recent research does highlight the power of the brand when setting up your brewery and this is an important part of the course considering how to differentiate your beer and brewery offer from the rest.

Carsington Water Food & Drink Fair opens it doors to visitors from 10 - 4pm on Sunday 29th June.  Entry is free and there will be loads of free tasters and the opportunity to talk to artisan food producers to here their story before you buy.
